Tawari is a light coloured honey. It has a mild flavour and intense sweetness with tastes of butterscotch.
Tāwari is unique to New Zealnad and is only found in a few parts of the North Island. The tāwari grows to over 10 metres high and has striking white flowers and foliage. The flowers of the tāwari were one of the few used by our ancestors for necklaces and garlands which were worn at festive occasions. Their nectar is produced at the base of the flower which produces this beautiful New Zealand honey.
This honey can be used in desserts or as a straight sweetner. It is also perfect for drizzling over your best soft cheeses, especially camembert or brie.
